Olive oil production 2021/2022: first day report

The harvest is usually a very busy time. We’ve waited for the first possible day when the olive mill starts the olive to oil transformation to start early harvest 2021/2022. The weather is still great and it’s a pleasure to stay outside. We decided to share some details about the olive oil production process in 20211, the first Martum olive oil of the new year, the report from the 10th of October 2021.

The harvest is usually a very busy time. We’ve waited for the first possible day when the olive mill starts the olive to oil transformation to start early harvest 2021/2022. The weather is still great and it’s a pleasure to stay outside. We decided to share some details about the olive oil production process in 20211, the first Martum olive oil of the new year, the report from the 10th of October 2021.

The work started at 8 a.m. with 6 people working on the field.

With a short break for lunch the work continued till 3.30 pm.

The transfortmation (“molitura”) was booked at 4 pm, so the olives moved straight to the mill for transformation.

At the mill (“frantoio”) the olives were put in larger containers for the weight control. That is how the weight for today was calculated, 860 kg, 1896 pounds.

After this one by one the containers with olives were freed up, and the transformation process began.

We were really lucky with the weather, it was so pleasant to stay outside.

The leaves remain, and the olives go up for transformation.

But first – some washing with water!

About an hour for elaborating the olive paste with the temperature control.

And finally… Here we go!

The amount for the day is 123 lt. It will take a few weeks to become clear, less strong and ready for shipping.

The oil of this day will be shipped in tins at the beginning of November.
